Shaken or Stirred? Discussing Midcentury Mixology with Steen Bojsen-Møller, Seymour’s Co-Owner

Legendary mixologist and co-owner of Seymour’s and Toucans Steen Bojsen-Møller chats with us about Modernism Cocktail Class 2022. This fun, hands-on mixology class explores the process of making high-quality hand-crafted cocktails while you follow along with the experts and make your own for sampling.

The Midcentury Mixology Cocktail Clinics have become so popular that they are selling out within minutes. We chatted with Steen to discuss what makes the Clinics so special and learn a little bit about his preferences when it comes to all things Midcentury + Mixology.

F10 - We hear that the Midcentury Mixology Cocktail Clinic at Mr. Lyons are selling out - FAST! What do you think makes them so popular?  (*February 2022 classes are sold out!)

SB - I’m happy to hear that! The classes are very hands-on and designed so that the guests can make the cocktails at home. It’s a very social affair, and what’s better than having a few cocktails after a mid-century house tour?

F10 - How many years has Mr. Lyons offered the Mixology Clinic?

SB - I believe this is our 4th year.

F10 - Where at Mr. Lyons does the Mixology Clinic take place and is there anything that guests should know before registering?

SB - We set up in the Conservatory which is very airy and bright. My only advice is to eat a little before the class or bring some snacks. The best insider tip is…make a reservation at Mr. Lyons in advance if you are taking the later class.

F10 - What is your favorite cocktail from that time period and how do we make it?

SB - I’m partial to a Brooklyn.

  • 1.5 oz Rye Whiskey (I like Rittenhouse)

  • 3 oz Luxardo Maraschino Liqueurr

  • 1.5 oz Dry Vermouth

  • .3 oz Amer Dit Picon (Golden Moon Distillery out of Colorado does a fantastic Amer Dit Picon true to the original recipe from 1837 - not quite Modernism era but still amazing.)

  • Stir all ingredients over ice and strain into a chilled Coupe glass

F10 - Now - let’s talk, martinis. Gin or vodka?

SB - Gin! Keep the bottle and a glass in the freezer.

F10 - Shaken or stirred?

SB - Stirred in a chilled shaker.

F10 - Olive or onion?

SB - I’m ok with either, or both even, as long as they are cold.

F10 - What is one thing you’ve always wanted to do during Modernism Week but haven’t been able to yet?

SB - Keith Markovitz does a fantastic Architectural Bus Tour…well so i’ve heard at least, because i’m always too busy to go on one.

F10 - What is the key ingredient to the perfect cocktail?

SB - Good liquor and balance. Garnish is so so but execution is up there with booze and balance. And don’t be afraid to experiment at home!  Next time you go out, ask for something you haven’t tried before. See you at the CLINIC!!
